Fire up that Barbie… you just HAVE to try this fabulous recipe for Smokey BBQ Prawns. And what better day than national BBQ day -Oz Day!

Each time I’ve made these babies, guests have demanded the recipe! It’s too good not to share, so here it is (hope Donna doesn’t mind).
Here’s what you need…
1kg (raw) Green King Prawns
Smokey BBQ Butter
200g unsalted butter, softened
1 reaspoon tomato paste
1 1/2 teaspoons smoked paprika
2 teaspoons ground sumac
1 teaspoon Worcestershire sauce
1 teaspoon honey
2 teaspoons mustard powder
2 cloves garlic, crushed
sea salt & black pepper
Here’s what you do…
Mix all the ingredients together (except the prawns).
Divide into 2 portions.
Thread prawns onto bamboo skewers (soak the skewers for 30mins in water first so they don’t burn).
Preheat char grill, pan or BBQ over high heat.
Throw on the skewers, and cook 2 minutes brushing with 1 portion of the butter.
Turn and cook for a further 1-2 mins until cooked through, brushing with the extra butter.
Sprinkle prawns with salt & pepper and serve with remaining butter.
