Jamie’s Cajun Chicken, Corn Salsa and Sweet Potato Smash

I was given Jamie Oliver’s new book recently as an early Christmas gift… and I think we could easily eat our way through the book by Chrissy!

Jamie’s 15 Minute Meals… Plus 25 mins for Kiddo distractions!

It was wasn’t fancy pickings in our fridge by week’s end.

But  I happened to have most of the ingredients for Cajun Chicken. I have difficulty sticking to a recipe anyhow so it’s not unusual for me to ad-lib a bit.

Like all of the recipes in his book, it was fast. But not 15 minutes fast. Add another 25 mins for Kiddo wrangling.

You’ve just got to try this one… it’s gobsmackingly delicious, dead easy and quick stix!

All the stuff you need

Jamie does love a bang of hot chilli, and so does Glamourdadi. Thumbs up for Jamie.

I obviously left the chilli out for the Kiddos. I also made their polenta crumbed chicken without the cajun spice.

BUT The Baby ended up eating some of our spiced chicken as well. And she loved it! Don’t be shy dishing up spices to a one year old Mamas, you might be surprised.

FAVE JAMIE TIP #1: Slice the chicken breast in half horizontally. Then place it on the crumb with another sheet of baking paper over the top. Then BASH the bejeezus out of it. GREAT therapy at the end of the day to get out those frustrations. This makes the chicken tender and thinner so it cooks faster.

FAVE JAMIE TIP #2: Slice sweet potato into thin pieces in the food processor. Tip into a saucepan and cover with boiling water from the kettle. Place a lid over the saucepan and let it sit whilst you get on with the rest. By the time the chicken is cooked, your sweet potato is cooked through, just like magic.

Smash the sweet potato and add Sweet Chilli sauce to taste. I set some aside for The Kiddos without chilli.

I didn’t have a griddle pan like Jamie, so I just grilled the corn in my oven.

Corn Salsa: finely dice a spring onion, 1/2 punnet cherry tomatoes, bunch of fresh coriander and slice kernels from 3 cobs of grilled corn. Squeeze fresh lime juice (or the bottled stuff which is all I had).

I diced a whole fresh chilli and served it on the side for Glamourdadi and I, so the Kiddos could try some salsa too. Again – bingo it was a hit!

If you forgot the crunchy bacon bits at the end, like I almost did it wouldn’t be a disaster. Every mouthful is packed with “bags of flavour” as Jamie says. And he’s right… it was SO delicious!

Our portion control spun waaay out. Pile it high kiss it goodbye!
